What exactly do knuckle pushups help with? And by any chance do they make your punches harder :P

I believe that they get your wrist used to stabilizing under pressure so in a sense they help your punching more than a palm pushup would. It would make your wrist lest likely to buckle if you screw up. They also callous your knuckles and if you do them on a hard surface like I do (basement floor), it's kind of a form of iron palm training in a way. It makes your fists tough.
Doing them on your knuckles gives you that extra couple inches to dip down further, which means more chest stretch, which means more chest work. They're good for working the chest just a little harder. Which would translate into a stronger punch.

First caveat: I'm not any gym teacher, or professional fighter, or martial arts instructor - so take my words with a grain of salt, will you..
As far I've understood, knuckles may help to wrist alignment, and hence, also may help to striking. It may help to bring some understanding to striking area, but the hardening/calluses/whatever... that, and it's usefullness to striking or martial arts skills, that seems to be highly debatable.
The length to movement can be arranged also by using some platform (small stools, books, you name it).

hmm im not sure about the punching power..could help i guess..but as ving sed, it does toughen up ur knuckles. most pplz dont do them right anywayz. ur supposed 2 only rest ur weight on ur first 2 knuckles (closest 2 ur thumb) on both hands. i guess maybe coz theyre the main knuckles that impact wen u punch..but yea..iono..thats jes how i was taught ..x]
