hello,
this is a good site. Thanks for creating it and sharing it.
For level 1, how many days a week should I practice the exercises?
Level I, probably 3 times a week to start.
5 Times a week is maximum. If you do it every day, there would not be any time for muscle growth.

For exercise 2, is it a pull-up or a hold?

That's a hold.
JUst holding with body straight and arms straight.
Level one is a hold for rows and hold for push ups.
Level two is a hold for rows, but legs are higher, so it's more difficult.
Level three is horizontal pull ups and push ups.

what i wanted to know about the different levels is should you do a certain amount of sets. I know some say just to hold your weight but how many times should it be done. It wasn't stated at all.

This is not a training routine but more of an excersice cataluge\list , Also I don't think level one excersies are of any use only for old\obese\unfit people\young kids
also you don't have to use stuff from onle leevl at a time , for exampe a single leg squat is much easier then an OAP\OAC it's uncomparable (legs are bigger muscules that work well together and havign one leg on the ground is even less resistance then an immobile forarm on a pullup bar) so you get the point...

Very true.
It seems like the leg exercises and arm exercise get more difficult in relation to each other as level increase, but not in relation to the whole level.
That's cool though, allot of stuff to pick out of.

You should be able to do one legged squats before any other one limbed BW excersice... way earlier too..

One leg squat before lower body exercises, not one arm upper body exercises, right?
